PARSLEY
Parsley originated in the Mediterranean region. It seems at first parsley was only used as a medicinal herb and later used as a food. Today we use it as an herb, vegetable, and spice.
The nutrients found in parsley include the vitamins A, C, E, K, & thiamine. It contains the B vitamins of, riboflavin (B2), niacin (B3), B6, B12, pantothenic acid (B5). It contains choline & folates along with the minerals calcium, iron, magnesium, manganese, potassium, zinc, phosporus & copper. Parsley is also a great source of compounds of limonene, myristicin, beta carotene, eugenol and alpha thujene. The leaves of the parsley plant contain carbohydrates, fats, protein & energy.
